Delicious Raw Cacao (chocolate) Muffins


Ohh yes, you can have healthy nutritious chocolate tasting muffins during the day as snacks without feeling guilty about all the processed foods, refined grains and sugar in our food.  Just try that with a warm cup of almond milk and see how you feel.

Dry Ingredients:
1 ½ cup gluten free flour
¼ cup coconut flour
½ cup raw cacao powder
¼ cup chopped almonds
2 tbsps organic flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
2 tsps cinnamon
¼ tsp nutmeg
1/4 tsp celtic sea salt
1 tbsp organic dried raisins
1 tbsp organic dries cranberries
1 tbsp organic dried blueberries

Wet Ingredients:
2 medium free range eggs
¼ cup organic coconut oil
¼ to ½ cup almond milk
1 large banana
¼ cup brown rice syrup


  • Mix all dry ingredients together in a mixing bowl
  • Slightly blend all wet  ingredients together
  • Add wet ingredients to dry ingredients and mix thoroughly
  • Lightly chop raisins, cranberries and blueberries, then  mix into muffin mix until a smooth consistency is achieved. 
  • Bake at 350 C for 12 -15 minutes
  • Optional: brown rice syrup can be substituted for manuka honey
  • Servings: 24 mini muffins
  • Nutritional Value: gluten free, high in dietary fiber, good source of protein, carbohydrates, good source of essential fatty acids and antioxidant rich, anti microbial properties and spices help control blood sugar.
